Bean and Meat Enchiladas (Gluten Free & Dairy Free)

Delicious, easy, make-ahead dinner. You can make them the night before or the morning of; let them sit in the refrigerator for a few hours to soak up all the flavors and then pop them in the oven at dinnertime.

Bean and Meat Enchiladas (Gluten Free & Dairy Free)
Instructions
  1. Saute ground beef and diced onions, drain and add taco seasoning and water according to seasoning packet. In a large baking dish, pour 1/2 cup of enchilada sauce in the bottom of the dish. Scoop beans and meat into tortilla, wrap, and place in dish, seam side down. Continue making all enchiladas until dish is full. Pour 1/2 cup enchilada sauce over the top of the enchiladas. Bake at 350-degrees for 35 minutes or until heated through. Let stand for 5 minutes. Garnish with green onions.
